Empire Kosher's "Just Like Bubbe's" Chicken Soup

1 quartered or 8 piece cut-up Empire Kosher chicken (or 4 Empire Kosher chicken legs w/thighs)

1 tablespoon salt

1 teaspoon ground pepper

½ bunch fresh dill, washed well

½ bunch fresh flat leaf parsley, washed well

1 whole onion, peeled

1 whole parsnip, peeled

3 large carrots, cut in pieces

3 stalks celery, cut in pieces



1. Place all ingredients in an 8 quart stock pot, then fill to the top with water. Heat on medium high heat.

2. Bring to a boil, then cover and reduce to a simmer for 2 hours.

Optional:


12 minutes before shutting flame, add 10oz of egg noodles

OR

Make Matzo Balls as per direction on box but boil them in the soup, instead of their own pot of water (20 minutes).

Serving suggestion: Serve in bowls with carrot, celery and noodle or matzo ball. Some may like to have pieces of chicken in the soup as well – you can simply remove the chicken from pot and place some cut up pieces in the soup as you serve.
